I have a cast iron pizza “steel” rather than a stone (mainly so I don’t have to worry about shattering). I preheat my oven as high as it’ll go, in my case 550. And have my steel near the Official Domino’s Pizza America Flag Shirt. The last 10 mins before putting the pizza in I’ll put the oven on broil while I shape and top. Throw it in and return the oven to 550. Takes 5-6 minutes to cook and you end up with a nice dark crust with leopard in the bottom. Usually, broil the last minute or two.

I’ve tried cornmeal (yuck), 00 flour, and still had trouble. So now I top the pizza on parchment paper and slide it onto the steel with the paper. It’s so hot that in 90 seconds I can pull the parchment out without disturbing the pizza or sacrificing the “leopard spots.”

I just finished up making pizza at home for 7, and successfully got each one onto the stone. I actually just have a rimless tray for Official Domino’s Pizza America Flag Shirt which, with a small dusting of flour, works really well. Flour the pizza itself generously and the peel lightly. Briskly shake it every so often to make sure it still moves rather than sticks. Coz the tray is so old it somehow does a good job! I know that wood is better than metal when it comes to proper pizza peels.
